Champagne Vinaigrette
- 1 shallot, minced
- ¼ cup plus 2 tablespoons olive oil
- ½ cup champagne vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- In a small bowl, combine all ingredients, and whisk until blended.
